In several European countries scientists carry out research for the prevalence, prevention, causes and perception of boar taint in pork. In Spain, for years a large part of the pigs are not castrated. The EU goals for 2018 in mind, Spanish researchers asked themselves three questions. What is the prevalence of boar taint in pigs from Spanish farms? What is the perspective from the Spanish supply chain and the opinion of stakeholders? How sensitive are consumers to androstenone and can cooking methods mask boar taint? Read the summary of results (in English). Click here for the full study reports
